Chicken & Shrimp Cajun Pasta


This simple Cajun pasta recipe will blow your socks off! Its easy to make simple ingredients and little to no clean up. If you love a delicious creamy pasta with a kick this recipe is for you!


This cajun recipe with a mixture of Italian and Rasta flavors with delicious savory garlic and onion flavor that’s great for pasta lovers and kid approved. If you’re looking for a quick and easy dinner to satisfy the crowd then read on. 






Cajun Chicken & Shrimp Pasta


Ingredients
  • 1 pound box of Penne Pasta. (I used organic noodles) cook according to directions on box
  • 10 asparagus bottoms cut washed amd dried
  • 1/4 cup of butter (I used salted) 
  • 3-4 cloves of fresh or peeled garlic (minced) 
  • 3 teaspoons of flour dissolved in warm water (to thicken sauce if needed) 
  • 2 1/2 cups of shredded chicken (cooked the day before)
  • 15-20 peeled and deveined shrimp
  • Louisiana Cajun Seasoning or Creole Seasoning (To taste) 
  • Garlic powder (To taste) 
  • Onion powder (To taste) 
  • All purpose Caribbean seasoning (To taste) 
  • 2/3-3 cups of Italian blend cheese
  • Paprika & Cayenne pepper
  • One small onion sliced thinly
  • 1/2 tablespoon of olive oil 
  • 1 cup of fresh spinach 
  • Two jars of your favorite Alfredo sauce I used one Classico “roasted red pepper alfredo” and one “ roasted garlic alfredo” 

Cooking Directions 

0. Set oven to 350 and add olive oil to asparagus a little salt & pepper and toss in the oven for about 10m 

1. Prepare shrimp by washing and taking off tails. Then proceed to put them in a bowl add a few drizzles of olive oil then lightly coat with cajun seasoning, garlic and onion powder. Cover and set to side. 

2. Heat a large frying pan on medium-low heat with 1/2 tablespoon of olive oil. Once oil is heated add sliced onions. Sauté for 5-7m or until brown and caramelized. Add garlic sauté for an additional 2 minutes or until garlic is fragrant.  

2.5) Cook pasta according to box ( BE SURE TO SEASON WATER) 

3. Add shrimp to garlic and onion mixture and add 1 tablespoon of water. Mix well and cook shrimp until pink. DO NOT OVERCOOK. 

4. Turn heat on low and add shredded chicken to pan Add a dash of cayenne and paprika also the all purpose seasoning and mix well until everything is uniformly blended. 


5. Add one jar of your Alfredo sauce and mix well; then add half of the other in the other half pour flour mixture close and shake. This will insure the sauce is nice thick and creamy. Mix until everything is uniform. Add Spinach and stir. 

6. Drain pasta and rinse with HOT water.

 


7. Add pasta in slowly making sure to stir in so it is coated well with the sauce. Once everything is mixed well add the cheese on top. Turn off oven and take out asparagus, place pasta in to melt the cheese for about 2-3 minutes. 

8. Take out pasta and set on stove to marvel at your beautiful creation! Grab plates and enjoy!

Tips

• Boil chicken thighs the night before to save prep time. 
• Add as many veggies as you would like such as broccoli.
